Abstract wouldn’t seem out of place in one of Las Vegas’s more exclusive casinos. Once seated, waiters glide up with a champagne trolley. There is a lot of dark, heavy, expensive-looking wood. The tables appear to be upholstered with snakeskin, while the ceiling is covered in gold leaf. The entrance from the street leads into a piano bar where diners can have a pre-meal drink. In the other corner, Lefebvre exuded a haughty Gallic indifference to Ramsay’s spluttering.Įxactly how much influence Ramsay had on the French chef’s cooking style is moot and I expect that both sides would shout they were right until their dying breaths hissed from their bodies.Įither way, Abstract in Inverness went on to win fistfuls of awards and was recently named a rising star by Michelin, indicating that it was heading in the right direction for a full-blown star.Īll of this means that the Abstract on Edinburgh’s Castle Terrace has a lot to live up to. The pedal, named Skeleton, features a rod-shaped composite structure which is over-moulded with 60 per cent glass-filled new Technyl Max technology.
